Our company name “Geroa Eraiki” (Basque language for: Building your own future), embodies the essence of our vision – building your own future. Guided by the four elemental forces of Earth, Fire, Water, and Wind, we embark on a transformative journey to craft extraordinary culinary experiences. Our first concept LUR, meaning Earth in Basque, marks the genesis of our culinary expedition. Like the solid ground beneath our feet, we believe in starting with a strong foundation. With locally sourced season produce and a commitment to sustainability, LUR’s dishes exemplify the richness and authenticity of Basque culture, connecting you to the land’s bounty.

Aitor Garate is the executive chef and owner of LUR, a Spanish Basque concept restaurant at Time Out Market Miami Beach, which was ranked among the Sixteen Restaurants That Defined American Dining in 2022, as well as number 1 on The 10 Restaurants That Defined Miami Dining in 2022 by Resy.

Prior to this, he worked at a number of highly acclaimed restaurants across the Basque Country, including some of the best in the world. Career highlights include two stints at Azurmendi (Three Michelin Stars, 14th at the world, The World´s 50 Best Restaurants, 2019), where he worked his way up from the youngest trainee to the youngest head of pastries, before arriving at the head of the Meat department, and the famed Asador Etxebarri (3rd in the world, The World’s 50 Best Restaurants, 2021), where he was the head sommelier, as well as in charge of research and development. More recently, he was the Head Chef at Leku, a Basque inspired restaurant at the New Rubell Museum in Miami.

At his newest project, LUR, Aitor brings his vast experience to the Time Out Market, where patrons are treated to an opulent three or eight course seasonal tasting menu in addition to what The Infatuation Miami has ranked one of the best Basque Cheesecakes in Miami. Lucky for us, this is only the beginning for the
twenty-eight-year-old chef.
